§ 111.171. Safety and adequacy of water supply.

  • A.

    Water Supply. The water supply to a food establishment operation shall be adequate and shall be of safe, sanitary quality. The water supply systems shall meet either the applicable public water supply standards of the Ohio of Environmental Protection Agency (OEPA), or applicable private water system standards of Chapter 3701-28 of the Ohio Administrative Code.

    B.

    Bulk Water Transport. All potable water not provided directly by pipe to the food establishment or temporary food establishment operation from its source shall be transported in an approved bulk water transport system and shall be delivered to a closed-water system. Both of these systems shall be constructed and operated in accordance with the applicable design standards of the Ohio Environmental Protection Agency or the Ohio Department of Health.

    C.

    Bottled and Packaged Water. Bottled and packaged potable water shall be obtained from a source that complies with applicable laws and shall be handled and stored in a way that protects it from contamination. Bottled and packaged potable water shall be dispensed from the original container.

    D.

    Water Pressure/Temperature. Water under pressure shall be provided to all fixtures and equipment that use water.

    E.

    Steam. Steam used in contact with food or food contact surfaces shall be free from any materials or additives other than those specified in 21 C.F.R. 173.310, as may be amended.
