§ 111.178. Lighting.

  • A.

    Lighting in Work Areas. Permanently fixed artificial light sources shall be installed to provide at least forty foot-candles of light on all food preparation surfaces and at equipment or utensil washing work levels.

    B.

    Lighting in Other Areas. Permanently fixed artificial light sources shall be installed to provide at least twenty foot-candles of light at a distance of thirty inches from the floor in walk-in refrigerating units, dry food storage areas, utensil and equipment storage areas, employee lavatory and toilet areas, and in all other areas. This requirement also shall apply to dining areas and lavatory and toilet areas.

    C.

    Lighting Protection. Lights and fixtures located over or adjacent to exposed food, equipment or utensils shall be shielded or be shatter-resistant to protect food products, equipment and utensils from contamination in the event of breakage.

    D.

    Infrared/Heat Lamps. Infrared or other heat lamps shall be shatter-resistant or be protected against breakage by shielding surrounding and extending beyond the bulb, leaving only the face of the bulb exposed.
