§ 111.181. Temporary food establishments.

    Requirements. A temporary food establishment shall comply with the applicable requirements of this article, except as otherwise specifically provided.

    B.

    Food-Approved Source. All foods not prepared at the temporary food establishment shall be prepared in a licensed food service operation, a licensed food establishment, or an operation licensed or inspected by another licensing agency. These foods shall be transported to the temporary food establishment by a sanitary method.

    C.

    Food Protection. Mechanical refrigeration shall be used for overnight storage of potentially hazardous foods used in temporary food establishment operations.

    D.

    Equipment and Utensils. When food items are prepared on-site of a temporary food establishment operation, a three-compartment sink system shall be provided or made available and used only for manual washing, rinsing, sanitizing of equipment, and multiple-use utensils.

    E.

    Hand Washing Facilities. A temporary food establishment operation shall provide a hand washing facility for employees.
